Punjabi Style Baigan Bharta Banane Ka Asaan Tareeqa

- Ingredients (Ajzaa)
2 bare baigan (eggplant)
2 bari pyaaz (onion), bareek kati hui
3 se 4 tamatar (tomatoes), bareek katay huay
2 se 3 haree mirchain (green chilies), bareek kati hui
1 tablespoon adrak lehsan ka paste (ginger-garlic paste)
1 teaspoon laal mirch powder (red chili powder)
1 teaspoon haldi powder (turmeric powder)
1 teaspoon zeera (cumin seeds)
2 tablespoon tel (oil)
Namak hasb-e-zaiqa (salt to taste)
Hara dhaniya (fresh coriander) garnish ke liye
1 tablespoon lemon juice (optional)

- 1. Baigan ko Bhunna
Baigan ka dhuwan bharta ka sab se khaas hissa hota hai. Sab se pehle baigan ko gas burner par ya oven mein high flame par bhunain. Is ke liye baigan ka chilka thora oil laga kar itna bhunain ke chilka kalay rang ka ho jaye aur baigan andr se naram ho jaye.
Jab baigan achi tarah bhunn jaye, to usay thanda hone dain aur chilka hata kar baigan ko achi tarah masal lain.
- 2. Masala tayar karna
Ek fry pan mein tel garam karein aur usme zeera daal kar fry karein jab tak ke wo brown na ho jaye.
Is ke baad isme adrak lehsan ka paste daal kar halki aanch par fry karein jab tak raw smell khatam na ho jaye.
Ab isme pyaaz daal kar golden brown hone tak fry karein.

- 3. Baigan ko masalay mein milana
Ab bhunne huay baigan ko masalay mein daal kar achi tarah mix karein aur 10 se 15 minutes tak low flame par cook karein.
Agar zaroorat ho to thoda pani daal kar aur 5 minutes tak paka lein.
- 4. Finishing touches
Jab baigan aur masalay achi tarah mix ho jayein, to isay choolhay se utaar kar hara dhaniya aur lemon juice (optional) se garnish karein.
- Serve Karna
