Ingredients:
All-purpose flour---------------- sifted 3 Cups
Salt--------------- 1 tbs or as per taste
Nigella seeds--------------- 1 tsp
Carom seeds---------------- 1 tsp
Cooking oil-------------- 2 tbs
Water--------------- 3/4 Cup or as needed
Red chilli powder----------------- 1 tsp or as per taste
Garam masala powder----------------- ½ tsp
Salt--------------- 1 tsp or as per taste
Cumin powder----------------- 1 tsp
Turmeric powder--------------- ½ tsp
Chaat masala---------------- 1 tsp
Chicken fillets----------------- 250g
Cooking oil--------------- 2 tbs
Cooking oil--------------- 1 tbs
Cumin seeds----------------- 1 tsp
Carom seeds---------------- ½ tsp
Ginger---------------- chopped ½ tbs
Coriander seeds------------------- crushed ½ tbs
Potatoes------------------- boiled & mashed 5 medium
Fresh coriander----------------- chopped 2-3 tbs
All-purpose flour-------------- 3 tbs
Water----------------- ½ Cup or as needed
Green chutney--------------- as needed
Cooking oil----------------- for frying
Directions:
Take a bowl add all-purpose flour salt nigella seeds carom seeds vegetable oil and blend well.
Now add water and knead until hard dough is made ,cover and let it rest for half-hour .
Now take alittle bowl add red chilli powder garam masala powder salt cumin powder turmeric powder chaat masala mix well and put aside .
Pat dry chicken fillets with kitchen towel tissue .
Now sprinkle prepared spice mix on each side of the chicken fillets and reserve the remaining spice mix for later use.
Now during a frypan add vegetable oil place chicken fillets and cook on medium flame for two minutes all sides then cover and let it cook on low flame for five minutes.
shred the chicken with the assistance of forks and shift the chicken on one side of frypan .
Now an equivalent frypan add vegetable oil cumin seeds carom seeds and blend well.
Now add ginger and cook for a moment .
Now dd coriander seeds boiled and potato reserved spice mix and blend with the shredded chicken until well combined.
Add fresh coriander mix well and let it cool.
In a small bowl add all-purpose flour water & mix well Flour slurry is prepared .
Now knead dough again until smooth and divide into two equal halves.
one part make a ball and roll out the dough with the assistance of kitchen utensil into square shape.
Now add and spread cooked chicken and potato mixture and green chutney over it.
Now roll out dough and dig pin wheels slices less than 1 inch.
Take a wok heat vegetable oil and dip pin wheels slices in flour slurry and fry on medium low flame from each side until golden brown.
Pinwheel Samosa is prepared Serve with Chutney.
